This 50/50 blend, one traditional and one experimental, gives a familiar, well-rounded chocolate base with an exciting, spicy depth that will leave people wondering what's in their cup. Just tell them it's heart made in Ohio.

La Libertad, Huehuetenango, Guatemala
Varieties: Caturra, Sarchimor, & Bourbon
Victelio has fermentation and drying facilities on his farm. He first ferments the cherries in nylon bags under shade in a cool place for 24-36 hours, depending on the weather. The coffees are separated using the floating technique, then pulped, after which they through a second fermentation for 24 hours in cement tanks. The coffee is then dried in parchment for 12 days (depending on climate) on patios.
